docs: scrub remaining plan-7/UI mentions from project-structure
The ##ui/.htmlx/LIVE track (plan 7) was removed as stale, so drop its dangling references in 08-project-structure.md: the `ws, sub, htmlx, assets (plan 7)` runtime/src line, the `06-ui-live` oop-vm contract entry, the `plan 7 UI/.htmlx/LIVE` server-track step, and `ui` in the build rule-of-thumb.
